A good masonry barbecue is the heart of the garden: family and friends gather around it on warm evenings. Before you start building, though, settle a single question: how do you like to cook? Do you make paella or stews over a wood fire, grill over embers, or prefer a wood-fired oven? The answer determines what kind of barbecue you need — and once that is settled, the rest is "only" execution.
First, the type
- Open fire pit / paella or cauldron stand: simple, atmospheric, ideal for wood-fire cooking.
- Grill station: a fixed or built-in grill grate at a comfortable working height.
- Wood-fired oven or smoker: a more serious, multi-purpose build for enthusiastic cooks.
- Combined barbecue: firebox, grill and worktop in one.
Choosing the spot
Choose the barbecue's location carefully. Keep enough distance from the house, the trees and the fence for fire safety. Take the prevailing wind direction into account so the smoke does not drift towards the terrace or the neighbours. And think about comfort too: have space nearby for seating and food preparation. In summer, remember that many Andalusian municipalities restrict open fires during the high fire-risk season — check your town hall's rules.
Foundations and materials
Any masonry barbecue carries considerable weight, so it needs a stable base — typically a properly built concrete footing or slab on firm ground. For the firebox, use heat-resistant materials — firebricks and refractory mortar — because ordinary brick and mortar will crack over time under the heat. The outer facing can be clinker brick, natural stone, or elements chosen to harmonise with the garden's block paving.
Smoke extraction and safety
A closed-firebox oven or smoker needs a chimney to provide proper draught and carry the smoke away. Keep water or sand close at hand for extinguishing, and never leave a burning fire unattended — especially with children in the garden.
A masonry garden barbecue is, in short, a great investment in shared moments — provided the type, the spot and the foundations are well thought out. A carefully built barbecue will remain one of the garden's favourite spots for decades.
